The
Campus Kitchens Project is about more than meals. At our core
is the belief that our meals and volunteer energy will be more
powerful when combined with empowering education like culinary
job training, nutrition education, and healthy cooking classes
for families. Each Campus Kitchen is encouraged to develop programming
that empowers their meal recipients and meets their community’s
specific needs. CKP has developed curricula and support for several
empowerment programs. Two examples are:
- Culinary Job Training: our Culinary Job Training Program works
in partnership with local direct service agencies, and is designed
to provide unemployed and underemployed men and women with the
opportunity to learn new job skills. Trainees commit to an eight-to-ten-week
program where they learn food service skills, study safety and
sanitation, and learn skills to help them with resume writing,
interviewing, and job hunting. Our trainees work as part of the
Campus Kitchen team. As they learn, their hard work goes into
the production of meals for our clients.
- Nutrition Education: Students from around the country have
developed lessons that teach children and families about nutrition,
food choices, and healthy cooking on a budget. CKP has compiled
these lessons into a curriculum that is available to all Campus
Kitchens, offering everything from recipes to handouts on topics
from the nutrition pyramid to cooking “heart healthy soul
food” to the importance of local food systems and agriculture.
